°C = (°F - 32) x 5/9 gas mark = (°F - 250) / 25
Fan ovens circulate hot air and cook faster, so the usual advice is to set them 20 °C (about 25 °F) lower than a conventional oven. Gas mark 4, 350 °F and 180 °C are the same moderate oven.
